For those seeking new adventures, the latest cocktail menu of The Whisky Library at Newport World Resorts is a collection of art-inspired concoctions, each paying homage to an acclaimed work of art.
Designed like a book, the menu is divided into chapters representing a distinct flavor profile. Such an engaging approach invites guests to embark on a unique journey with every visit.
Chloe Herman, F&B director of Newport World Resorts, developed the menu for The Whisky Library, renowned for its extensive selection of fine whiskies, whiskeys, and spirits from around the world. She describes how the cocktails were designed to be unique, unlike anything found at other bars.
“We add a bit of theatrics to it,” she says, referring to the entertaining elements they have incorporated into the presentation such as bubbles and smoke, among others. “We have a machine from England that produces edible dry ice—the only one in the Philippines. We also have a printer from Japan that can print your face on a cocktail.”
Herman emphasizes the extensive market research conducted across Australia, England, Las Vegas, and Macau—places known for their cocktail culture—to craft a menu that’s beyond the ordinary.
The new Cocktail Menu Volume 2 features 25 signature cocktails and four mocktails, organized into seven distinct chapters: Tropical & Lively, Soft Sour & Spice, Bright & Refreshing, Decadent & Indulgent, Bold & Adventurous, Shared & Experienced Together, and Flavorful
& Non-Alcoholic.
Highly recommended in the Bold & Adventurous Chapter is Naked Journey, a cocktail featuring a single maltSingle MaltA whisky made at a single distillery from malted barley, typically distilled in pot stills and aged in oak. Single malts display distinct regional character and style, from smoky IslayGo to Single Malt Glossary from India. Inspired by the painting of Lady Godiva’s legendary ride, it is presented on the menu through Pre-Raphaelite painter John Collier’s interpretation from 1898.
Naked Journey is a concoction of Paul John Bold Indian Single MaltSingle MaltA whisky made at a single distillery from malted barley, typically distilled in pot stills and aged in oak. Single malts display distinct regional character and style, from smoky IslayGo to Single Malt Glossary, orange, honey, lemon, Benedictine, aromatic bitters, and egg white—its bold whisky kick balanced by a delicate sweetness. The popular cocktail is served in a smoke box, adding a theatrical and entertaining flair.
For those interested in pairings, The Whisky Library’s lineup of Masterclasses is not to be missed. The 30-dish tasting event features premium whiskeys and whiskies, paired with a diverse selection of dishes—from hot and cold appetizers to various meats and seafood, such as salmon, duck, chicken, and beef. Herman likens the Masterclass experience to an ascending flight, where flavors build like a plane taking off, rising from one level to the next. The pairing typically begins with citrus and seafood, followed by richer, meatier dishes, culminating in a
sweet dessert pairing.
For the whisky-cigar connoisseur, Herman shares her personal recommendation: “The Flor De Selva Colección Clásica Robusto paired with The Dalmore Portwood Reserve is an impeccable match. The interplay of flavors—bell pepper, dark chocolate, caramel, and white pepper—creates a beautifully balanced and layered experience, making it a standout pairing,” she says.
