Offbeat Bistro: Where Nostalgia Meets Innovation

Don Baldosano and Angelo Comsti open Offbeat Bistro, a retro- Filipino restaurant that promises bold flavors and a new dining experience that’s both familiar and exciting.

Offbeat Bistro, located  at Ayala Triangle Gardens in Makati, is the latest concept from chef Don Baldosano, known for the beloved Filipino private dining restaurant Linamnam, and food editor and chef Angelo Comsti. This casual eatery offers a retro-Filipino dining experience, drawing inspiration from nostalgic flavors and childhood favorites. While the concept embraces the past, the duo's modern take on Filipino classics is bold, inventive, and refreshingly contemporary. The space, designed by the chefs themselves, draws inspiration from the traditional paper mâché craft of Paete, Laguna. Known for its carved molds, the art form, Taka, is an integral part of Filipino heritage. This playful spirit is reflected throughout the 90-square-meter indoor space. Paete’s iconic paper mâché toys are displayed on the shelves by the bar, while other elements of Filipino culture are thoughtfully integrated into the interiors. Oversized wooden utensils, reminiscent of those found in traditional Filipino kitchens,  are painted..
