Elbert's Collective We received some sad news a few days ago. Elbert’s Collective, by restaurateur Elbert Cuenca, and his brother, Chef Adrian, is shutting its doors for good at the end of May. For the last two years, it was our go-to restaurant whenever we needed to satisfy cravings for anything Elbert’s: his eponymous cheesesteak and Reuben sandwiches, his wood-fired pizza, and something we order every single visit: Chef Adrian’s extraordinary spaghetti a la carbonara. We’ll already be missing the al dente pasta slicked with raw egg, topped with chunks of salty guanciale flecked with fat, specks of cracked black pepper, and shavings of pecorino Romano. Then there’s the soft-serve ice cream made with fresh milk. Have it as a shake or as a drug store sundae drenched with chocolate or strawberry syrup.
